THE SCIENCE BEHIND SOURDOUGH
Natural Sourdough fermentation is a traditional method where wild yeast and friendly bacteria, called lactobacilli, work together. During our process, these microbes help neutralize phytic acid found in wheat and pre-digest parts of the grain, which can make it easier for some people to enjoy. This natural transformation not only creates a more complex flavor and better texture but is the secret behind our Kaslo Sourdough Pasta the world’s first commercial sourdough pasta, made to be both delicious and gentle on your digestive system.
